Mom's Cinnamon Rolls


My mom is one of the best cooks in the world! Growing up there was always yummy food cooking. Now that I'm grown sometimes I crave those comforts of home.

  Today is one of those days. Last night my husband and I were in a car accident. So we're both pretty sore today. It's one of those days that some comfort food sounds wonderful. So when I'm not up to cooking, that's when I like to look through my recipes. I actually made these several weeks ago. I took a picture to send to my husband to let him see what he was coming home to. :)

Shells.....my renewed obession

Taco Salad & Raspberry Cheesecake

 
 
So, several years ago I bought a Shell Baker. I used it for a while and then forgot about it until recently when I was re-organizing and I found it again. I originally bought it to make mini cherry cheesecakes with sugar cookie crusts. (This is also very yummy!)
With 5 kids, some of which are very picky, it's good to get creative once in awhile. I have had a lot of fun making shells out of various things and serving them for breakfast, dinner and more. My husband questioned why we were eating little pies at first, but then he tasted them.  :)

The shells can also be made using 2 muffin tins.
The concept is the same.
 
 
Spray both sets of muffin tins with pan spray: the inside of one and the bottoms of the other. 
 
Then put in in the type of dough or batter that you want for your shell.
You are only limited by your imagination.
 
Here I used canned biscuit dough. It is the smaller biscuits so I used two biscuits per shell.
Place one on top of the other and then roll out into a flat circle.
Then place in the prepared muffin tin or shell baker.
 
(2 muffin tins)
 
OR
 
(This is the shell baker)
 
If using muffin tins, bake at 350 until done.
(Varies depending on type of dough.)


 
Check on them while they are cooking to get them cooked to perfection.
 
 
When they are done, gently take them out and let them cool on a wire rack.
 
 

Now comes the Fun Part!

Filling Your Shells

 
Here are a few examples that I did today with the biscuit shells
 

Breakfast Cups

This one has Scrambled eggs and cheese.
You could add crumbled bacon, sausage, hash browns, peppers, onion or what ever else you like.
I have filled these with sausage and then covered with sausage gravy.  Very Yummy.
 

Mini Taco Salad

This one is also easy. Taco meat, cheese, tomatoes, hot sauce.
Add lettuce, olives & sour cream  and what ever else you like.
 

Finally Dessert!

 

This is just the biscuit cups filled with pudding and whip cream with sprinkles.
With desert the possibilities are endless....

Use your favorite COOKIE DOUGH or CAKE BATTER

Filled with fruit, ice cream, No-Bake Cheese Cake, puddings or pie fillings.

 

Garlic Bread Cups

Take a regular piece of bread
Pinch up each side into the middle like this.


Then spread both sides with butter and sprinkle with garlic.
 
Then place in the muffin tin with the other one on top of it and bake until lightly toasted.

Fill with pasta & sauce, spaghetti or even pizza toppings.

 

French Toast

Prepare bread the same way as above for the Garlic bread.
Then dip them in an egg and milk mixture for French toast.
Then bake and you get French toast cups.
They taste amazing with fruit and whip cream or syrup.
 
 

Hash-Brown Cups

Take a frozen hash brown patty and warm up in microwave for 30 seconds to soften it.
 
Then put it into the muffin tin cutting off a little of the long ends
and putting them on the sides to fill in the gap to form a cup.
Then Bake until crispy and formed.
 
Now fill with things like meat and gravy, cheese or whatever sounds good.
 
 
Biscuit & Bread cups can be filled with soups or stews
and you have a mini bread bowl or mini chicken pot pie cup.
 
 
 
 
 

Use Your Imagination and let your kids help! 

The possibilities are Yummy and fun!
